Tomato Parmesan Tortellini Soup

Out of all the soups I’ve experimented with, I think this is by far the best soup I’ve ever cooked. This hearty soup will be on heavy rotation during the winter months at your house, I promise! With tortellini, sweet (or hot if you prefer!) sausage, and a delicious creamy tomato parmesan base, I think you’ll love this one as much as I do.

Serves:  3-4 +/- –  Cooktime: 1 hour +/-



  • 1/2 Pound Ground Sweet Sausage
  • 1 Can 14-ounce Crushed Tomatoes
  • 1/2 Large White Onion, Diced
  • 1 Shallot, Sliced Thin
  • 1 Large Beefsteak Tomato, Diced
  • 1 Pound Cheese Tortellini
  • 2 Large Handfuls Spinach
  • 2 Tablespoons Tomato Paste
  • 2 Teaspoons Sugar
  • 4 Cups Chicken Broth
  • 1 Cup Half & Half
  • 1 Cup Parmesan Cheese
  • 3 Large Cloves Garlic, Minced
  • 1 Teaspoon Italian Seasoning
  • 1/2 Teaspoon Black Pepper
  • 1 Teaspoon Salt
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • Pinch Crushed Red Pepper Flakes
  • 1/2 Teaspoon Parsley Flakes
  • 1/4 Cup Fresh Parsley, Minced


1.) Place a 4 to 6-quart pot on medium heat. Add olive oil to pot and let come to temperature. Add onions and shallots to pan and let sauté for 2 minutes. Add ground sausage to pot and break apart into bite-sized pieces. Cook on medium heat for 5 minutes. Add garlic to pan and sauté for an additional 2-3 minutes.

2.) Add fresh tomato, canned tomatoes, tomato paste, sugar, salt, pepper, garlic powder, onion powder, crushed red pepper flakes, Italian seasoning, and parsley flakes to pot. Stir and let cook covered for 7-8 minutes, until tomatoes have broken down.

3.) Add chicken broth and heavy cream. Stir to incorporate. Cover and let cook for 15 minutes, until broth is boiling. Taste and salt and pepper if necessary.

4.) Meanwhile, while waiting for broth to boil, fill a large pot with salted water. Add tortellini and cook for desired time on package. Drain water when tortellini is done cooking.

5.) Once 15 minute or so minutes has passed, add parmesan cheese, tortellini, and fresh parsley. Cook for an additional 5 minutes, covered, stirring occasionally.

6.) Serve immediately with as much parmesan cheese (the more the better!) as desired. Enjoy!
