Red Hot Chile con Carne

Last night was rainy and dreary so I decided to make something that really boosts my mood…chili! It’s so easy and quick, but the flavors are so amazing and rich it tastes like it should be difficult to make! This recipe serves 4 + leftovers. Thankfully, chili freezes exceptionally well. Pop it in the freezer in a sealed container and when you have a craving reheat in the microwave or stovetop!

Serves: 6 – Cooktime: About one hour

INGREDIENTS:

  • 3 cloves garlic
  • 1 large beefsteak tomato
  • 1 medium-large white onion
  • 1 poblano chili pepper
  • 1 pound ground beef
  • 3 tbsp olive oil
  • 1 can red kidney beans (15.5 oz.)
  • 1 can diced tomatoes (14.5 oz)
  • 1, 1-lb jar of traditional pasta sauce
  • 2 tbsp tomato paste
  • 1.5 cups of beef broth
  • 3 tbsp chili powder
  • 2 tbsp sugar
  • 2 tbsp cumin
  • 2 tbsp garlic powder
  • 2 tbsp oregano
  • Hot red pepper flakes – OPTIONAL
  • Salt & Pepper to season
  • Parsley to garnish – OPTIONAL

DIRECTIONS:

1.) Prep: Mince garlic, finely chop onion and chili poblano pepper (it’s not spicy just gives the dish depth), and dice tomato.

2.) Add olive oil to pot on medium heat. Add in minced garlic. Stir to completely cover garlic with oil. Cook for about a minute. Add in onions and peppers and cook for about 6 minutes, or until onions are slightly tender. Add in ground beef.

3.) Now it’s time to season: add in chile powder, cumin, garlic powder, and oregano. Add in a couple shakes of red pepper flakes for a little bit of spice. Break up beef and add S&P to season. Add chopped tomatoes. Cook until beef is brown (no more red is showing), about 8-10 minutes.

4.) Drain and rinse 1 can of kidney beans and add into pot. Add in beef broth, diced tomatoes, traditional pasta sauce, granulated sugar, and tomato paste (this will help thicken). Stir and cover. Season with S&P to taste. Let cook for 10 minutes while occasionally stiring. Reduce heat to medium low and cook for another 15 minutes, occasionally stirring.

5.) Garnish with cheese, parsley, and serve with a side of bread!

6.) Enjoy!!
