Homemade Maple Pecan Granola

This past Christmas I decided to make a lot of the gifts I gave to my family. One of the goodies I included in the basket was this homemade maple pecan granola. It was a hit! Since making granola, Connor and I have stopped buying cereal at the store. We’ve wanted to make this switch for quite awhile, as there are so many unknown ingredients that go into store bought cereals. It feels good knowing what we’re putting into our bodies, and did I mention it’s DELICIOUS? The best part is it keeps up to a month in a sealed glass container, not that it would ever last that long though…

Fills:  2 Glass Quarts Jars + 1 Glass Pint Jar –  Prepare Time: 1 hour & 15 minutes +/-

INGREDIENTS:

MAPLE PECAN GRANOLA:

  • 3 Cups Old Fashioned Rolled Oats
  • 1-1/2 Cups Shredded Coconut, Unsweetened or Sweetened
  • 1 Cup Pecan Halves
  • 1-1/2 Teaspoons Salt
  • 1-1/2 Teaspoons Cinnamon
  • 3/4 Teaspoon Ground Cardamom
  • 1/2 Teaspoon Ground Clove
  • 1-1/2 Teaspoons Pure Vanilla Extract
  • 3/4 Cups Maple Syrup
  • 1/2 Cup Coconut Oil

DIRECTIONS:

1.) Preheat oven to 250°F. Combine all ingredients in a large mixing bowl. Grease a large baking sheet with 1 tablespoon +/- of coconut oil.

2.) Once ingredients are combined, spread granola evenly on baking sheet and place in oven for 1 hour, flipping halfway through for an even cook.

3.) Let cool, place in jars, and enjoy!
