Breakfast Vegetable Sauté

I’ve always been a fan of savory over sweet when it comes to breakfast foods. I serve this side with 2 poached eggs over toasted sourdough bread with a side of bacon. It’s the perfect breakfast as the ingredients all compliment each other so well. This sauté is so easy and only takes about 10 minutes!

Serves:  1 +/- –  Cooktime: 10 minutes +/-

INGREDIENTS:

Vegetable Sauté :

  • 1 cup Spinach, Roughly Chopped
  • 1 tbsp Olive oil
  • 1 Garlic Clove, Minced
  • 1 Beefsteak Tomato, Chopped
  • 1/4 cup White Onions, Chopped
  • 1/8 cup Freshly Shredded Parmesan Cheese
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

DIRECTIONS:

1.) Place medium frypan on medium heat. Add olive oil and let come to temp. Add minced garlic and let cook for 30 seconds, until fragrant. Add onions and season with a dash of salt and pepper. Cook for 5 minutes, occasionally stirring.

2.) Add tomatoes, garlic powder, salt, and pepper. Let cook for an additional two minutes, occasionally stirring. Add spinach and cook until tender, about three minutes. With one minute left, add parmesan cheese and mix well to combine ingredients.

3.) Serve alongside desired sides. This would be delicious with eggs any style and a breakfast meat of choice. Enjoy!
