Vanilla Belgian Waffles

It is almost guaranteed that Connor will wake up most Saturday and Sunday mornings asking if we can have waffles. He is OBSSESSED. I made these waffles up to fix his cravings! He loves them, and oh, did I mention they’re super easy to make?

Serves: 2 +/- –  Cooktime: 10 minutes +/-

INGREDIENTS:

WAFFLES:

  • 1 cup Flour
  • 1 Egg
  • 2 tsp Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1/2 cup and 1 tbsp Milk
  • 1/4 cup Canola Oil
  • 2 tsp. Baking Powder
  • 1/4 cup Vanilla Yogurt
  • Pinch of Salt

TOPPINGS:

  • 2 tbsp +/- butter
  • Maple Syrup
  • 1 Orange, peeled and wedged
  • Handful of Berries: blueberries, raspberries, strawberries (sliced), and/or blackberries
  • 1 tbsp Powdered Sugar
  • OPTIONAL: Whipped Cream (a necessity in our house)

DIRECTIONS:

1.) Plug in waffle maker and let preheat. Beat eggs in medium bowl until frothy. Whisk in milk, flour, oil, sugar, baking powder, yogurt, and vanilla extract and mix well. Let sit for 5 minutes.

2.) I like my waffle-doneness setting set to 4 out of 5, this yields a perfectly browned waffle, but still tender in the inside.

3.) Scoop out mix and place on waffle maker (depending on your waffle maker, you might need to add nonstick spray, we don’t need to do as ours has a nonstick coating). Cook for 3 minutes, or until your waffle maker let’s you know it’s done!

4.) Spread each waffle with 1 tbsp. butter and drizzle with maple syrup. Top with desired toppings and serve!

GENERAL TIPS:

  • If you have extra waffle batter and are full, don’t throw out the excess batter. Instead, pour into waffle maker and cook waffles, then freeze for future breakfasts!
