In my head I always thought making bacon wrapped scallops was difficult. I knew I had to use the broiler and the ingredients? Game over! Way too expensive. But if you get scallops on sale, and know how to properly use your broiler? Man! This will be your go-to recipe for all your upcoming parties!
Serves: 2 +/- – Cooktime: 15-20 minutes
INGREDIENTS:
SCALLOPS:
- 8 scallops (about half a pound) – fresh or frozen
- 8 slices regular bacon (about half a package) – (avoid buying thick cut bacon)
- Dash salt and pepper
- 2 tbsp. fresh parsley, minced
GLAZE:
- 2 tbsp. maple syrup
- 2 tsp. soy sauce
- 1/2 tsp. garlic salt
- 1/4 tsp. ground pepper
- Dash crushed red pepper flakes
DIRECTIONS:
1.) Preheat the boiler to 490°F. Make sure the top rack is in the highest slot. Prep your scallops by patting scallops dry and lightly season with salt and pepper. Wrap each one with a slice of bacon and pin together with a toothpick.
2.) Prep the glaze. In a small bowl add maple syrup (I would suggest using the real stuff), soy sauce, garlic salt, crushed red pepper flakes, and pepper and whisk together.
3.) Spray a baking sheet with non-stick spray and add scallops to pan. Drizzle and brush scallops with glaze and place on top rack. Cook for 10-12 minutes, or until bacon is crispy and scallops are cooked. Sprinkle with minced parsley upon removal from oven.
5.) Plate and enjoy!!
